Ingredients:
- 1 ½ cups (150g) graham cracker crumbs
- ½ cup (100g) granulated sugar
- ½ cup (115g) unsalted butter, melted
- 1 cup (250g) creamy peanut butter (not natural)
- ¾ cup (90g) powdered sugar
- 1 teaspoon vanilla extract
- 1 ½ cups (250g) semisweet chocolate chips
- 2 tablespoons (30ml) coconut oil or vegetable shortening
Instructions:
- Prepare the Pan: Line the baking pan with parchment paper or grease lightly.
- Make the Crust: In a bowl, combine graham cracker crumbs and granulated sugar. Add melted butter and mix until crumbly and well combined. Press the mixture evenly into the bottom of the prepared pan.
- Prepare the Filling: In a separate bowl, mix peanut butter, powdered sugar, and vanilla extract until smooth. Spread the peanut butter mixture evenly over the graham cracker crust.
- Prepare the Chocolate Topping: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until melted and smooth.
- Assemble the Bars: Pour the melted chocolate over the peanut butter layer, spreading it evenly. Tap the pan lightly on the counter to remove air bubbles.
- Chill: Refrigerate the bars for at least 30 minutes or until the chocolate is firm.
- Cut and Serve: Lift the bars out of the pan using the parchment, if used. Cut into squares and serve.
