Ingredients:

  • 1 ½ cups (150g) graham cracker crumbs
  • ½ cup (100g) granulated sugar
  • ½ cup (115g) unsalted butter, melted
  • 1 cup (250g) creamy peanut butter (not natural)
  • ¾ cup (90g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups (250g) semisweet chocolate chips
  • 2 tablespoons (30ml) coconut oil or vegetable shortening

Instructions:

  1. Prepare the Pan: Line the baking pan with parchment paper or grease lightly.
  2. Make the Crust: In a bowl, combine graham cracker crumbs and granulated sugar. Add melted butter and mix until crumbly and well combined. Press the mixture evenly into the bottom of the prepared pan.
  3. Prepare the Filling: In a separate bowl, mix peanut butter, powdered sugar, and vanilla extract until smooth. Spread the peanut butter mixture evenly over the graham cracker crust.
  4. Prepare the Chocolate Topping: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until melted and smooth.
  5. Assemble the Bars: Pour the melted chocolate over the peanut butter layer, spreading it evenly. Tap the pan lightly on the counter to remove air bubbles.
  6. Chill: Refrigerate the bars for at least 30 minutes or until the chocolate is firm.
  7. Cut and Serve: Lift the bars out of the pan using the parchment, if used. Cut into squares and serve.
