Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) ground cinnamon
- ½ tsp (3g) kosher salt
- 2 large (100g) eggs
- ½ cup (120ml) neutral oil
- ½ cup (120g) unsweetened applesauce
- ½ cup (170g) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 1 cup (130g) grated zucchini, squeezed dry
- 1 cup (110g) grated carrots
- ½ cup (60g) sweetened shredded coconut
- ½ cup (75g) raisins
- ½ cup (60g) chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C) and line a 12-cup standard muffin tin with paper liners or non-stick spray.
- Grate the zucchini and carrots using the fine side of a box grater.
- Place the grated zucchini in a clean kitchen towel and squeeze firmly to remove excess water to prevent sogginess.
- In a large bowl, whisk together the eggs, oil, applesauce, maple syrup, and vanilla until the mixture is smooth and emulsified.
- Sift the flour, baking soda, cinnamon, and salt directly into the wet ingredients.
- Gently fold the dry ingredients into the wet using a spatula until just combined; do not overmix.
- Stir in the squeezed zucchini, carrots, coconut, raisins, and walnuts until evenly distributed.
- Divide the batter equally among the muffin tin cups and bake for 25 minutes or until a toothpick inserted into the center comes out clean.
