Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (2g) ground cinnamon
  • ½ tsp (3g) kosher salt
  • 2 large (100g) eggs
  • ½ cup (120ml) neutral oil
  • ½ cup (120g) unsweetened applesauce
  • ½ cup (170g) pure maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 cup (130g) grated zucchini, squeezed dry
  • 1 cup (110g) grated carrots
  • ½ cup (60g) sweetened shredded coconut
  • ½ cup (75g) raisins
  • ½ cup (60g) chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 12-cup standard muffin tin with paper liners or non-stick spray.
  2. Grate the zucchini and carrots using the fine side of a box grater.
  3. Place the grated zucchini in a clean kitchen towel and squeeze firmly to remove excess water to prevent sogginess.
  4. In a large bowl, whisk together the eggs, oil, applesauce, maple syrup, and vanilla until the mixture is smooth and emulsified.
  5. Sift the flour, baking soda, cinnamon, and salt directly into the wet ingredients.
  6. Gently fold the dry ingredients into the wet using a spatula until just combined; do not overmix.
  7. Stir in the squeezed zucchini, carrots, coconut, raisins, and walnuts until evenly distributed.
  8. Divide the batter equally among the muffin tin cups and bake for 25 minutes or until a toothpick inserted into the center comes out clean.
