Ingredients:

  • 1 lb (approx. 450g) Salmon fillets, skin on or off
  • 3 Tbsp Shiro (White) Miso Paste
  • 1.5 Tbsp Unsalted Butter, softened
  • 3 medium cloves Garlic, minced
  • 1 tsp Sesame Oil
  • Salt and Black Pepper to taste

Instructions:

  1. Prepare the Glaze: In a small bowl, combine the softened butter, Shiro miso paste, minced garlic, and sesame oil. Mix thoroughly until a smooth compound butter forms.
  2. Prepare Salmon: Pat the salmon fillets completely dry with a paper towel. Season lightly with salt and pepper.
  3. Sear the Salmon: Heat a large, oven-safe skillet over medium-high heat. Place fillets skin side down (if skin-on) or flesh side down and sear for 3-4 minutes until the surface is crispy.
  4. Glaze and Finish: Flip the salmon fillets. Reduce the heat to medium. Generously top each fillet with the prepared miso butter glaze. Cook for 5-6 minutes, basting the fish with the melting glaze continuously until the fish is cooked through and flaky (internal temperature 145°F or 63°C).
  5. Serve immediately.
