Ingredients:
- 1.5 cups all-purpose flour
- 0.75 cup granulated sugar
- 2 tsp baking powder
- 0.5 tsp salt
- 1 large egg
- 0.5 cup whole milk
- 0.33 cup vegetable oil
- 1 tsp vanilla extract
- 0.75 cup mini semi-sweet chocolate chips
Instructions:
- Preheat oven to 375°F (190°C). Grease a mini muffin tin or line with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a medium bowl, beat the egg, then stir in the milk, oil, and vanilla.
- Pour the wet ingredients into the dry ingredients. Use a spatula to fold the mixture until just combined; stop as soon as no streaks of dry flour remain.
- Fold in the mini chocolate chips.
- Spoon the batter into the tins, filling each about 3/4 full.
- Bake for 10–12 minutes until the tops are golden-brown and springy.
- Cool in the pan for 5 minutes before transferring to a wire rack.
