Ingredients:

  • 1.5 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1 large egg
  • 0.5 cup whole milk
  • 0.33 cup vegetable oil
  • 1 tsp vanilla extract
  • 0.75 cup mini semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a mini muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a medium bowl, beat the egg, then stir in the milk, oil, and vanilla.
  4. Pour the wet ingredients into the dry ingredients. Use a spatula to fold the mixture until just combined; stop as soon as no streaks of dry flour remain.
  5. Fold in the mini chocolate chips.
  6. Spoon the batter into the tins, filling each about 3/4 full.
  7. Bake for 10–12 minutes until the tops are golden-brown and springy.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
