Ingredients:
- 1 pound (450g) boneless, skinless chicken breasts, cut into 1-inch (2.5cm) pieces
- 1 cup (120g) all-purpose flour
- 1 teaspoon (5g) paprika
- 1/2 teaspoon (2.5g) garlic powder
- 1/2 teaspoon (2.5g) onion powder
- 1/4 teaspoon (1.25g) cayenne pepper (optional)
- 1 large egg, beaten
- 1/2 cup (120ml) milk
- 1 cup (80g) panko breadcrumbs
- Vegetable oil, for frying
- Salt and black pepper to taste
- 1 box (approximately 10-12 waffles) frozen mini waffles
- Maple syrup, for drizzling
- Optional toppings: Toothpicks, colourful sprinkles
Instructions:
- Cut chicken into bite-sized pieces. Season flour with paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
- Dredge chicken in seasoned flour, then egg mixture, then panko breadcrumbs.
- Heat oil in a skillet and fry chicken until golden brown and cooked through (internal temperature 165°F/74°C). Drain on a wire rack.
- Toast or warm mini waffles according to package instructions.
- Place a chicken tender between two mini waffles and secure with a toothpick, if desired.
- Drizzle with maple syrup and serve immediately.
