Ingredients:

  • 1 pound (450g) boneless, skinless chicken breasts, cut into 1-inch (2.5cm) pieces
  • 1 cup (120g) all-purpose flour
  • 1 teaspoon (5g) paprika
  • 1/2 teaspoon (2.5g) garlic powder
  • 1/2 teaspoon (2.5g) onion powder
  • 1/4 teaspoon (1.25g) cayenne pepper (optional)
  • 1 large egg, beaten
  • 1/2 cup (120ml) milk
  • 1 cup (80g) panko breadcrumbs
  • Vegetable oil, for frying
  • Salt and black pepper to taste
  • 1 box (approximately 10-12 waffles) frozen mini waffles
  • Maple syrup, for drizzling
  • Optional toppings: Toothpicks, colourful sprinkles

Instructions:

  1. Cut chicken into bite-sized pieces. Season flour with paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  2. Dredge chicken in seasoned flour, then egg mixture, then panko breadcrumbs.
  3. Heat oil in a skillet and fry chicken until golden brown and cooked through (internal temperature 165°F/74°C). Drain on a wire rack.
  4. Toast or warm mini waffles according to package instructions.
  5. Place a chicken tender between two mini waffles and secure with a toothpick, if desired.
  6. Drizzle with maple syrup and serve immediately.
