Ingredients:

  • 4 corn tortillas
  • 1 tbsp avocado oil
  • 1/2 tsp sea salt
  • 1 lb sirloin steak, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1 cup fat-free refried beans
  • 1 cup shredded iceberg lettuce
  • 1/2 cup Cotija cheese, crumbled
  • 1/2 cup Greek yogurt
  • 1 cup fresh pico de gallo
  • 1 large avocado
  • 2 limes

Instructions:

  1. Lightly brush both sides of the corn tortillas with avocado oil and sprinkle with salt.
  2. Place tortillas in the air fryer basket in a single layer and air fry at 375°F (190°C) for 3–5 minutes, flipping halfway through, until golden and rigid.
  3. Pat the sliced sirloin dry with paper towels to ensure a proper sear.
  4. Toss the meat in a bowl with smoked paprika, cumin, garlic powder, salt, and pepper.
  5. Heat olive oil in a cast-iron skillet over high heat until shimmering.
  6. Add steak in a single layer; sear for 2 minutes per side without moving until a mahogany crust forms.
  7. Assemble by spreading warmed refried beans on each shell, followed by shredded lettuce, seared steak, crumbled Cotija cheese, Greek yogurt, pico de gallo, and sliced avocado.
  8. Serve immediately with lime wedges.
