Ingredients:
- 4 corn tortillas
- 1 tbsp avocado oil
- 1/2 tsp sea salt
- 1 lb sirloin steak, thinly sliced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1 cup fat-free refried beans
- 1 cup shredded iceberg lettuce
- 1/2 cup Cotija cheese, crumbled
- 1/2 cup Greek yogurt
- 1 cup fresh pico de gallo
- 1 large avocado
- 2 limes
Instructions:
- Lightly brush both sides of the corn tortillas with avocado oil and sprinkle with salt.
- Place tortillas in the air fryer basket in a single layer and air fry at 375°F (190°C) for 3–5 minutes, flipping halfway through, until golden and rigid.
- Pat the sliced sirloin dry with paper towels to ensure a proper sear.
- Toss the meat in a bowl with smoked paprika, cumin, garlic powder, salt, and pepper.
- Heat olive oil in a cast-iron skillet over high heat until shimmering.
- Add steak in a single layer; sear for 2 minutes per side without moving until a mahogany crust forms.
- Assemble by spreading warmed refried beans on each shell, followed by shredded lettuce, seared steak, crumbled Cotija cheese, Greek yogurt, pico de gallo, and sliced avocado.
- Serve immediately with lime wedges.
