Ingredients:

  • 5 cups Greek Yogurt (Full-Fat)
  • 1/4 cup Fresh Mint, finely chopped
  • 1 clove Garlic, grated or minced
  • 1 teaspoon Lemon Zest
  • 1 tablespoon fresh Lemon Juice (plus extra for finishing)
  • 1 teaspoon Extra Virgin Olive Oil (for sauce)
  • 1/2 teaspoon Salt (for sauce)
  • 1/4 teaspoon Black Pepper (for sauce)
  • 2 medium Courgettes (Zucchini), sliced lengthwise, 1 cm thick
  • 1 large Aubergine (Eggplant), sliced lengthwise, 1 cm thick
  • 2 Bell Peppers (mixed colours), seeded and cut into large flats or thick strips
  • 1 large Red Onion, cut into 1-inch thick rounds
  • 1 bunch Asparagus Spears (optional), trimmed
  • 4 tablespoons Olive Oil (for brushing/tossing)
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt (for grilling)
  • 1/2 teaspoon Black Pepper (for grilling)

Instructions:

  1. Combine the Greek yogurt, chopped mint, grated garlic, lemon zest, lemon juice, olive oil, salt, and pepper in a small bowl. Stir thoroughly and chill, covered, in the refrigerator for at least 15 minutes to allow flavors to meld.
  2. Prepare all vegetables by slicing uniformly (1 cm thickness). Place the sliced vegetables into a large bowl and drizzle liberally with the 4 tablespoons of olive oil.
  3. Add the dried oregano, grilling salt, and pepper. Toss gently until every piece is lightly coated. Allow the vegetables to rest and marinate for 10–15 minutes.
  4. Heat your grill or grill pan to medium-high heat (approx. 400°F / 200°C). Brush the grates with a small amount of oil to prevent sticking.
  5. Place the vegetables on the hot grill in small batches (do not overcrowd). Grill Peppers and Onions for 4–5 minutes per side. Grill Courgettes and Aubergine for 3–4 minutes per side. Grill Asparagus for 2–3 minutes total, turning once.
  6. Remove vegetables promptly once they are tender-crisp and display good char marks. Transfer immediately to a large serving platter.
  7. Squeeze the remaining lemon juice over the warm vegetables and add a final pinch of salt and pepper. Serve the Grilled Vegetable Platter with Yogurt Mint Sauce immediately, with the chilled Mint Yogurt Sauce served on the side.
