Ingredients:

  • 14 oz (397 g) firm or extra-firm tofu, well-drained
  • 3 tablespoons (45 mL) nutritional yeast
  • 1 tablespoon (15 mL) lemon juice
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) onion powder
  • 1 teaspoon (5 g) miso paste (white or yellow preferred)
  • 1 tablespoon (15 mL) olive oil
  • Salt and pepper, to taste
  • Fresh herbs (e.g., basil or parsley), for garnish (optional)
  • 1/4 teaspoon (1 g) red pepper flakes (optional)

Instructions:

  1. Crumble the drained tofu into the food processor.
  2. Add nutritional yeast, lemon juice, garlic powder, onion powder, miso paste, and olive oil.
  3. Pulse until the mixture is creamy but still has some texture. Scrape down the sides as needed.
  4. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes. Blend briefly to combine.
  5. Transfer the mixture to a mixing bowl, cover, and refrigerate for at least 15 minutes to let the flavors meld.
  6. Garnish with fresh herbs if desired and enjoy in salads, pasta, or as a spread.
