Ingredients:
- 14 oz (397 g) firm or extra-firm tofu, well-drained
- 3 tablespoons (45 mL) nutritional yeast
- 1 tablespoon (15 mL) lemon juice
- 1 teaspoon (5 g) garlic powder
- 1 teaspoon (5 g) onion powder
- 1 teaspoon (5 g) miso paste (white or yellow preferred)
- 1 tablespoon (15 mL) olive oil
- Salt and pepper, to taste
- Fresh herbs (e.g., basil or parsley), for garnish (optional)
- 1/4 teaspoon (1 g) red pepper flakes (optional)
Instructions:
- Crumble the drained tofu into the food processor.
- Add nutritional yeast, lemon juice, garlic powder, onion powder, miso paste, and olive oil.
- Pulse until the mixture is creamy but still has some texture. Scrape down the sides as needed.
- Taste and adjust seasoning with salt, pepper, and optional red pepper flakes. Blend briefly to combine.
- Transfer the mixture to a mixing bowl, cover, and refrigerate for at least 15 minutes to let the flavors meld.
- Garnish with fresh herbs if desired and enjoy in salads, pasta, or as a spread.
