Ingredients:

  • 2 cups (500g) fresh ricotta cheese
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Zest of 1 lemon
  • 1 teaspoon pure vanilla extract
  • 1/4 cup (60ml) milk
  • Powdered sugar for dusting
  • Fresh berries (e.g., strawberries, blueberries) for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease and line the bottom of a 9-inch (23cm) round cake pan with parchment paper.
  3. In a mixing bowl, combine ricotta, sugar, and eggs; whisk until smooth and well combined.
  4. Add flour, baking powder, and salt to the ricotta mixture; stir until just combined.
  5. Mix in lemon zest, vanilla extract, and milk; ensure all ingredients are incorporated evenly.
  6. Pour the batter into the prepared cake pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Slice and dust with powdered sugar, garnishing with fresh berries if desired.
