- 1 cup (200g) granulated sugar

- 1 teaspoon baking powder

- 1 teaspoon pure vanilla extract
- 1/4 cup (60ml) milk
- Powdered sugar for dusting
- Fresh berries (e.g., strawberries, blueberries) for garnish
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease and line the bottom of a 9-inch (23cm) round cake pan with parchment paper.
- In a mixing bowl, combine ricotta, sugar, and eggs; whisk until smooth and well combined.
- Add flour, baking powder, and salt to the ricotta mixture; stir until just combined.
- Mix in lemon zest, vanilla extract, and milk; ensure all ingredients are incorporated evenly.
- Pour the batter into the prepared cake pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and dust with powdered sugar, garnishing with fresh berries if desired.
