Ingredients:
- 1 lb ground beef (85% lean)
- 2 tbsp taco seasoning
- 1/4 cup water
- 8 cups romaine lettuce, chopped
- 1 cup canned black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 cup cherry tomatoes, halved
- 1 1/2 cups shredded sharp cheddar cheese
- 1 large avocado, diced
- 1/4 cup red onion, finely diced
- 2 cups Doritos or tortilla strips
- 1/2 cup sour cream (for dressing)
- 1/4 cup salsa
- 1 tbsp fresh lime juice
- 1 tsp taco seasoning (for dressing)
Instructions:
- Place the ground beef in the skillet over medium-high heat. Cook, breaking the meat apart with a spoon, until it reaches a deep mahogany-colored sear and no pink remains.
- Drain any excess grease from the skillet. Stir in the taco seasoning and water, simmering for 3–5 minutes until the liquid reduces into a thick glaze.
- Remove the beef from heat and let it sit for 5 minutes to prevent wilting the lettuce.
- In a large mixing bowl, combine the chopped romaine, black beans, corn, and cherry tomatoes. Toss gently to distribute.
- In a small bowl, whisk together the sour cream, salsa, lime juice, and taco seasoning until smooth.
- Divide the lettuce mixture among six bowls. Spoon the warm beef into the center of each bowl.
- Surround the beef with diced avocado, red onion, and shredded cheddar cheese.
- Drizzle the fiesta dressing over the top in a zig-zag pattern and garnish with Doritos or tortilla strips. Serve immediately.
