  • 2 cloves garlic, minced
  • 2 tablespoons (30ml) fresh rosemary, finely chopped
  • 2 tablespoons (30ml) fresh thyme, finely chopped
  • 1 tablespoon (15ml) Dijon mustard
  • 1 teaspoon (5ml) lemon zest
  • 1/2 teaspoon (2.5ml) sea salt
  • 1/4 teaspoon (1.25ml) black pepper
  • 4 boneless, skinless chicken breasts (about 6-8 ounces/170-225g each)

Instructions:

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, rosemary, thyme, Dijon mustard, lemon zest, salt, and pepper until well combined.
  2. Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to overnight. This Lemon Herb Zest provides the best flavor for a healthy grilled chicken marinade.
  3. Preheat your grill to medium-high heat (about 375-450°F or 190-230°C). If using a grill pan, heat it over medium-high heat.
  4. Remove chicken from marinade and discard marinade. Place chicken breasts on the preheated grill. Grill for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer to ensure accurate doneness.
  5. Remove chicken from grill and let rest for 5 minutes before slicing and serving. This helps the juices redistribute, resulting in a more tender and flavorful chicken.
