Ingredients:

  • 4 (6-ounce/170g) salmon fillets
  • 2 tablespoons olive oil (30ml)
  • 2 tablespoons lemon juice (30ml)
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs, chopped (parsley, dill, thyme)
  • 1/2 teaspoon salt (2.5ml)
  • 1/4 teaspoon black pepper (1.2ml)
  • Lemon slices, for garnish (optional)

Instructions:

  1. Preheat oven to 400°F (200°C/Gas Mark 6).
  2. Pat salmon fillets dry with paper towels. Place them on a baking sheet lined with parchment paper or lightly greased.
  3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chopped herbs, salt, and pepper.
  4. Spoon or brush the lemon-herb mixture evenly over the salmon fillets.
  5. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  6. Garnish with lemon slices (optional). Serve immediately.
