Ingredients:

  • 1.5 lbs (680g) Cod fillets, skinless, about 1 inch thick
  • 1 lb (450g) Asparagus, trimmed
  • 2 Lemons, one zested and juiced, one sliced
  • 2 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • 2 tbsp Fresh Parsley, chopped
  • 1 tbsp Fresh Thyme leaves
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Red Pepper Flakes (optional)
  • Salt and Black Pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
  2. In a bowl, toss asparagus with 1 tbsp olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
  3. In the same bowl, combine lemon zest, lemon juice, minced garlic, parsley, thyme, oregano, red pepper flakes (if using), remaining 1 tbsp olive oil, salt, and pepper.
  4. Place cod fillets on top of the asparagus. Spoon lemon herb mixture evenly over the cod. Arrange lemon slices over the cod.
  5. Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork and the asparagus is tender-crisp.
  6. Serve immediately.
