Ingredients:
- 1.5 lbs (680g) Cod fillets, skinless, about 1 inch thick
- 1 lb (450g) Asparagus, trimmed
- 2 Lemons, one zested and juiced, one sliced
- 2 cloves Garlic, minced
- 2 tbsp Olive Oil
- 2 tbsp Fresh Parsley, chopped
- 1 tbsp Fresh Thyme leaves
- 1/2 tsp Dried Oregano
- 1/4 tsp Red Pepper Flakes (optional)
- Salt and Black Pepper, to taste
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
- In a bowl, toss asparagus with 1 tbsp olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
- In the same bowl, combine lemon zest, lemon juice, minced garlic, parsley, thyme, oregano, red pepper flakes (if using), remaining 1 tbsp olive oil, salt, and pepper.
- Place cod fillets on top of the asparagus. Spoon lemon herb mixture evenly over the cod. Arrange lemon slices over the cod.
- Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork and the asparagus is tender-crisp.
- Serve immediately.
