Ingredients:
- 14 oz smoked kielbasa, sliced into 1/2-inch rounds
- 2 medium zucchini (approx 300g), sliced into 1/2-inch half-moons
- 1 large red bell pepper (approx 150g), deseeded and cut into 1-inch chunks
- 1 large yellow bell pepper (approx 150g), deseeded and cut into 1-inch chunks
- 1 small red onion (approx 100g), cut into thick wedges
- 1 cup broccoli florets (approx 100g), bite-sized
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, finely minced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp fine sea salt
- 1/4 tsp cracked black pepper
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the sliced kielbasa, zucchini, bell peppers, red onion, and broccoli.
- Drizzle the mixture with olive oil and sprinkle with minced garlic, smoked paprika, dried oregano, sea salt, and black pepper. Toss thoroughly until evenly coated.
- Spread the ingredients onto the prepared sheet pan in a single layer, ensuring space between pieces to allow for roasting rather than steaming.
- Roast in the center rack of the oven for 15 minutes.
- Remove the pan, toss the ingredients with a spatula, and return to the oven for an additional 5–10 minutes until the kielbasa edges are crispy and vegetables are tender.
