Ingredients:

  • 14 oz smoked kielbasa, sliced into 1/2-inch rounds
  • 2 medium zucchini (approx 300g), sliced into 1/2-inch half-moons
  • 1 large red bell pepper (approx 150g), deseeded and cut into 1-inch chunks
  • 1 large yellow bell pepper (approx 150g), deseeded and cut into 1-inch chunks
  • 1 small red onion (approx 100g), cut into thick wedges
  • 1 cup broccoli florets (approx 100g), bite-sized
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, finely minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp fine sea salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine the sliced kielbasa, zucchini, bell peppers, red onion, and broccoli.
  3. Drizzle the mixture with olive oil and sprinkle with minced garlic, smoked paprika, dried oregano, sea salt, and black pepper. Toss thoroughly until evenly coated.
  4. Spread the ingredients onto the prepared sheet pan in a single layer, ensuring space between pieces to allow for roasting rather than steaming.
  5. Roast in the center rack of the oven for 15 minutes.
  6. Remove the pan, toss the ingredients with a spatula, and return to the oven for an additional 5–10 minutes until the kielbasa edges are crispy and vegetables are tender.
