Ingredients:

  • 1 1/2 cups Low-Moisture Mozzarella Cheese, shredded
  • 2 oz Full-Fat Cream Cheese, softened
  • 1 Large Egg (for dough)
  • 3/4 cup Fine Almond Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Garlic Powder
  • 8 slices Thick-Cut Streaky Bacon, cooked crispy
  • 4 Large Eggs (for scrambling), whisked lightly
  • 2 tablespoons Heavy Cream (optional)
  • Salt and Black Pepper, to taste
  • 1/2 cup Sharp Cheddar Cheese, sliced or shredded
  • 1 tablespoon Fresh Chives, chopped
  • 1/4 cup Mayonnaise (full-fat)
  • 1 teaspoon Dijon Mustard
  • 1/2 teaspoon Sriracha or Hot Sauce (optional)
  • 1/2 teaspoon Apple Cider Vinegar (ACV)

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Combine shredded mozzarella and cream cheese in a microwave-safe bowl. Microwave in 30-second intervals until fully melted and smooth (about 90 seconds total). Stir well.
  3. In a separate bowl, whisk together the almond flour, baking powder, salt, and garlic powder.
  4. Crack the large egg (for the dough) into the melted cheese mixture and whisk vigorously. Quickly fold in the dry ingredients until a uniform, sticky dough ball forms. Do not overmix.
  5. Divide the dough into 8 equal portions. Roll each portion into a small ball and flatten gently into a disc about 2.5 inches wide and 1/2 inch thick. Place on the prepared baking sheet.
  6. Bake the bases for 12–15 minutes, or until puffy and lightly golden brown. Remove and let cool completely on a wire rack.
  7. Cook the bacon in a skillet until extra crispy. Drain excess grease thoroughly and chop roughly. Set aside.
  8. Whisk the 4 large eggs with the heavy cream (if using), salt, and pepper. Cook in the same skillet over medium-low heat until just set—soft and fluffy, not dry.
  9. Make the Aioli: In a small bowl, whisk together the mayonnaise, Dijon mustard, hot sauce, and ACV.
  10. Using a serrated knife, carefully slice each cooled biscuit base horizontally.
  11. Layer the Sliders: Spread a thin layer of the spicy aioli on both the top and bottom halves of each biscuit.
  12. Fill the bottom half of the biscuit with a spoonful of scrambled egg mixture, a generous pinch of crispy bacon, and a small slice of sharp cheddar.
  13. Optional Melting: Place the assembled sliders back onto the baking sheet (tops off) and return to the oven for 3-5 minutes, or until the cheese is melted and gooey.
  14. Garnish and Serve: Top with the remaining biscuit halves, sprinkle with fresh chives, and serve immediately.
