Ingredients:

  • 1 lb (450g) carrots, peeled and cut into even-sized sticks
  • 3 tablespoons (45ml) honey
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon salt (5g)
  • ½ teaspoon black pepper (2g)
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme) (5g)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the carrots into sticks, ensuring they are all of uniform size for even cooking.
  3. In a mixing bowl, combine honey, olive oil, salt, pepper, and thyme.
  4. Add carrot sticks to the bowl and toss until they are well-coated with the honey mixture.
  5. Spread the carrots in a single layer on a baking tray lined with parchment paper.
  6. Place the tray in the preheated oven and roast for 25-30 minutes, turning halfway.
  7. Remove from the oven and serve hot, garnished with extra thyme if desired.
