Ingredients:
- 1 lb (450g) carrots, peeled and cut into even-sized sticks
- 3 tablespoons (45ml) honey
- 2 tablespoons (30ml) olive oil
- 1 teaspoon salt (5g)
- ½ teaspoon black pepper (2g)
- 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme) (5g)
Instructions:
- Preheat your oven to 425°F (220°C).
- Peel and cut the carrots into sticks, ensuring they are all of uniform size for even cooking.
- In a mixing bowl, combine honey, olive oil, salt, pepper, and thyme.
- Add carrot sticks to the bowl and toss until they are well-coated with the honey mixture.
- Spread the carrots in a single layer on a baking tray lined with parchment paper.
- Place the tray in the preheated oven and roast for 25-30 minutes, turning halfway.
- Remove from the oven and serve hot, garnished with extra thyme if desired.
