Ingredients:

  • 4 Boneless Pork Chops (approx. 6 oz each), trimmed
  • 1 Tbsp Cornflour (Cornstarch)
  • ½ tsp Salt (Kosher or sea salt)
  • ¼ tsp Black Pepper (Freshly ground)
  • Light coat Cooking Spray (High heat oil, e.g., canola or avocado)
  • 3 Tbsp Dijon Mustard
  • 1 tsp English Mustard (or spicy brown)
  • 3 Tbsp Runny Honey
  • 1 Tbsp Apple Cider Vinegar (ACV)
  • ½ tsp Garlic Powder
  • ½ tsp Smoked Paprika
  • 1 Tbsp Olive Oil

Instructions:

  1. Prep the Chops: Pat the pork chops completely dry using kitchen paper. This is key for achieving a proper sear and allows the marinade to stick.
  2. Mix the Marinade: In a medium bowl, whisk together all ingredients for the Honey Mustard Marinade (Dijon, English mustard, honey, ACV, garlic powder, paprika, and olive oil) until smooth.
  3. Marinate: Reserve approximately 2 tablespoons of the marinade for the final glaze. Place the dry pork chops into the remaining marinade, ensuring they are thoroughly coated. Cover and refrigerate for a minimum of 30 minutes, or up to 4 hours.
  4. The Dusting: Once marinated, lightly lift the chops out of the marinade and dust both sides lightly with the cornflour, salt, and pepper mixture. This thin coat prevents the glaze from dripping and burning in the air fryer basket.
  5. Preheat and Prepare: Preheat the air fryer to 200°C (400°F) for 3-5 minutes. Lightly coat the air fryer basket with cooking spray to prevent sticking.
  6. Load the Basket: Place the chops in a single layer in the air fryer basket, ensuring they do not touch. (If necessary, work in batches—do not overcrowd.)
  7. Initial Cook: Cook the chops for 4 minutes at 200°C (400°F).
  8. Flip and Glaze: Open the basket, flip the chops, and brush the reserved marinade/glaze lightly over the exposed surface.
  9. Finish Cooking: Return to the air fryer and cook for another 4–6 minutes.
  10. Check Doneness: Use a digital thermometer inserted into the thickest part of the chop. Cook until the internal temperature reaches 63°C (145°F).
  11. Rest: Immediately remove the chops from the air fryer and place them on a cutting board. Tent loosely with foil and allow them to rest for 5 minutes. This resting period is non-negotiable for juicy results.
