Ingredients:
- 1 lb (450g) carrots, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat oven to 400°F (200°C). Peel and chop carrots into even-sized pieces for even cooking.
- In a large bowl, toss carrots with olive oil, honey, rosemary, thyme, salt, and pepper. Ensure carrots are evenly coated.
- Spread carrots in a single layer on the baking sheet. Roast for 25 minutes, or until tender and slightly caramelized, flipping halfway through.
- Remove from oven and serve immediately.
