Ingredients:

  • 1 lb (450g) carrots, peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 400°F (200°C). Peel and chop carrots into even-sized pieces for even cooking.
  2. In a large bowl, toss carrots with olive oil, honey, rosemary, thyme, salt, and pepper. Ensure carrots are evenly coated.
  3. Spread carrots in a single layer on the baking sheet. Roast for 25 minutes, or until tender and slightly caramelized, flipping halfway through.
  4. Remove from oven and serve immediately.
