Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 1 tbsp (15ml) olive oil
- 1/4 tsp (1.25ml) salt
- 1/4 tsp (1.25ml) black pepper
- 3 cloves garlic, minced
- 1/4 cup (60ml) honey
- 1/4 cup (60ml) soy sauce (low sodium preferred)
- 2 tbsp (30ml) water
- 1 tbsp (15ml) rice vinegar (or apple cider vinegar)
- 1 tbsp (8g) cornstarch
- 1/2 tsp (2.5ml) sesame oil
- 1/4 tsp (1.25ml) red pepper flakes (optional)
- 2 cups cooked rice (Jasmine or Basmati)
- 2 green onions, thinly sliced
- Sesame seeds
Instructions:
- Pat shrimp dry and toss with olive oil, salt, and pepper.
- Whisk together garlic, honey, soy sauce, water, rice vinegar, cornstarch, sesame oil, and red pepper flakes in a small bowl.
- Heat skillet over medium-high heat. Cook shrimp for 2-3 minutes per side, until pink and opaque.
- Pour honey garlic sauce into skillet with shrimp. Cook, stirring, until sauce thickens (1-2 minutes).
- Divide rice between bowls. Top with honey garlic shrimp and sauce.
- Garnish with green onions and sesame seeds. Serve immediately.
