Ingredients:

  • 1 lb (450g) carrots, peeled and sliced into 1/4-inch thick rounds
  • 2 tablespoons (30ml) unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (15ml) soy sauce (low sodium preferred)
  • 1 tablespoon (15ml) water
  • 1/4 teaspoon (1.25ml) ground ginger
  • 1/4 teaspoon (1.25ml) salt (or to taste)
  • 1/8 teaspoon (0.6ml) black pepper (or to taste)
  • Fresh parsley or chives, chopped (for garnish, optional)

Instructions:

  1. Peel and slice carrots into even rounds.
  2. Melt butter in the skillet. Add garlic and sauté briefly until fragrant (about 30 seconds). Add carrots, salt and pepper and cook for about 5 minutes to soften slightly.
  3. In a small bowl, whisk together honey, soy sauce, water, and ginger.
  4. Pour the honey-garlic glaze over the carrots. Bring to a simmer, reduce heat to low, cover, and cook until carrots are tender-crisp (about 10-15 minutes), stirring occasionally.
  5. If the glaze is too thin, remove the lid and cook for a few more minutes, stirring constantly, until it thickens to your desired consistency.
  6. Garnish with fresh parsley or chives (if using) and serve immediately.
