Ingredients:
- 1 lb (450g) carrots, peeled and sliced into 1/4-inch thick rounds
- 2 tablespoons (30ml) unsalted butter
- 2 cloves garlic, minced
- 2 tablespoons (30ml) honey
- 1 tablespoon (15ml) soy sauce (low sodium preferred)
- 1 tablespoon (15ml) water
- 1/4 teaspoon (1.25ml) ground ginger
- 1/4 teaspoon (1.25ml) salt (or to taste)
- 1/8 teaspoon (0.6ml) black pepper (or to taste)
- Fresh parsley or chives, chopped (for garnish, optional)
Instructions:
- Peel and slice carrots into even rounds.
- Melt butter in the skillet. Add garlic and sauté briefly until fragrant (about 30 seconds). Add carrots, salt and pepper and cook for about 5 minutes to soften slightly.
- In a small bowl, whisk together honey, soy sauce, water, and ginger.
- Pour the honey-garlic glaze over the carrots. Bring to a simmer, reduce heat to low, cover, and cook until carrots are tender-crisp (about 10-15 minutes), stirring occasionally.
- If the glaze is too thin, remove the lid and cook for a few more minutes, stirring constantly, until it thickens to your desired consistency.
- Garnish with fresh parsley or chives (if using) and serve immediately.
