Ingredients:
- 3.5 cups (440g) bread flour
- 0.5 cup (120ml) warm water
- 0.5 cup (125g) pumpkin puree
- 2.25 tsp (7g) active dry yeast
- 3 tbsp (38g) brown sugar
- 1 tsp (6g) salt
- 1 tbsp (6g) pumpkin pie spice
- 2 tbsp (28g) melted butter
- 8 cups (1.9L) water
- 2 tbsp (30g) honey or brown sugar
Instructions:
- Combine warm water and brown sugar in a mixing bowl. Sprinkle yeast on top and let sit for 5–10 minutes until foamy.
- Stir in the pumpkin puree and melted butter until the mixture is smooth.
- Gradually add bread flour, salt, and pumpkin pie spice to the wet ingredients.
- Knead the dough using a mixer on medium-low for 5 minutes, or by hand on a floured surface for 8–10 minutes until smooth and springy.
- Place the dough in a lightly greased bowl, cover with a damp cloth, and let rise in a warm spot for 60–90 minutes until doubled in size.
- Shape the dough into bagels and allow a second brief proof.
- Bring 8 cups of water and 2 tbsp of honey or brown sugar to a boil in a large stock pot.
- Boil shaped bagels for a few minutes to set the crust, then remove with a slotted spoon.
- Place bagels on a parchment-lined baking sheet and bake for 20 minutes until deep golden brown.
