- 2.25 tsp active dry yeast
- 1 tsp honey
- 3.75 cups bread flour
- 1.5 tsp fine sea salt
- 2 tbsp extra virgin olive oil
Instructions:
- Bloom the yeast. Combine the 1.5 cups warm water, 1 tsp honey, and 2.25 tsp yeast in a bowl. Note: Wait 5–8 minutes until it looks like the frothy head on a latte.
- Mix the base. Stir in the 2 tbsp olive oil and 1.5 tsp salt. Gradually add the 3.75 cups bread flour.
- Form a ball. Use a wooden spoon to stir until a shaggy, messy ball forms and pulls away from the sides.
- Start the knead. Move the dough to a stand mixer or a floured surface.
- Develop the gluten. Knead for 8–10 minutes by hand or 5 minutes in a mixer until the dough is smooth and tacky.
- Perform the test. Pull a small piece of dough; it should stretch thin enough to see light through it without tearing.
- Prep for rising. Place the ball in an oiled bowl, flipping once to coat the top.
- Wait for growth. Cover with a damp cloth and let rise at room temperature for 2 hours until it has clearly doubled in size.
- Shape and bake. Punch down the dough, divide into four, and stretch into rounds. Bake at your oven's highest setting for 15 minutes until edges are golden and charred.
