Ingredients:
- Dried Greek Oregano: 3 Tbsp
- Smoked Paprika: 1 Tbsp
- Dried Thyme: 1 Tbsp
- Garlic Powder: 2 tsp
- Onion Powder: 1 tsp
- Black Pepper, freshly ground: 1 tsp
- Cumin, ground: 1/2 tsp
- Dried Rosemary, crushed: 1/2 tsp
- Kosher Salt: 1 tsp
- Boneless, Skinless Chicken Breasts (cubed): 1.5 lbs
- Fresh Lemon Juice: 1/4 cup
- Extra Virgin Olive Oil: 3 Tbsp
- Greek Spice Blend (from above): 3 Tbsp
- Fresh Garlic, minced: 2 cloves
- Red Bell Pepper (chunks for skewers): 1
- Red Onion (chunks for skewers): 1
Instructions:
- Prepare the Heart-Healthy Greek Spice Blend: In a small bowl, thoroughly whisk together all dry ingredients listed for the blend (Oregano, Paprika, Thyme, Garlic Powder, Onion Powder, Pepper, Cumin, Rosemary, Salt). Store excess in an airtight container.
- Marinate the Chicken: In a large bowl, combine the cubed chicken, lemon juice, olive oil, 3 tablespoons of the freshly made spice blend, and minced garlic. Toss well until every piece is evenly coated. Cover and refrigerate for at least 1 hour, ideally 4 hours.
- Prepare Skewers: If using wooden skewers, ensure they have soaked for at least 30 minutes. Thread the marinated chicken pieces alternately with chunks of red bell pepper and red onion.
- Preheat & Prep: Preheat the grill or grill pan to medium-high heat (about 400°F/200°C). Lightly oil the cooking surface to prevent sticking.
- Cook the Skewers: Place the assembled skewers on the hot grill. Cook for 6 to 7 minutes per side, turning carefully, until the chicken is cooked through (internal temperature 165°F/74°C) and nicely charred.
- Rest & Serve: Remove skewers from the heat and let them rest for 5 minutes before serving. Drizzle with fresh lemon juice if desired.
