Ingredients:

  • Dried Greek Oregano: 3 Tbsp
  • Smoked Paprika: 1 Tbsp
  • Dried Thyme: 1 Tbsp
  • Garlic Powder: 2 tsp
  • Onion Powder: 1 tsp
  • Black Pepper, freshly ground: 1 tsp
  • Cumin, ground: 1/2 tsp
  • Dried Rosemary, crushed: 1/2 tsp
  • Kosher Salt: 1 tsp
  • Boneless, Skinless Chicken Breasts (cubed): 1.5 lbs
  • Fresh Lemon Juice: 1/4 cup
  • Extra Virgin Olive Oil: 3 Tbsp
  • Greek Spice Blend (from above): 3 Tbsp
  • Fresh Garlic, minced: 2 cloves
  • Red Bell Pepper (chunks for skewers): 1
  • Red Onion (chunks for skewers): 1

Instructions:

  1. Prepare the Heart-Healthy Greek Spice Blend: In a small bowl, thoroughly whisk together all dry ingredients listed for the blend (Oregano, Paprika, Thyme, Garlic Powder, Onion Powder, Pepper, Cumin, Rosemary, Salt). Store excess in an airtight container.
  2. Marinate the Chicken: In a large bowl, combine the cubed chicken, lemon juice, olive oil, 3 tablespoons of the freshly made spice blend, and minced garlic. Toss well until every piece is evenly coated. Cover and refrigerate for at least 1 hour, ideally 4 hours.
  3. Prepare Skewers: If using wooden skewers, ensure they have soaked for at least 30 minutes. Thread the marinated chicken pieces alternately with chunks of red bell pepper and red onion.
  4. Preheat & Prep: Preheat the grill or grill pan to medium-high heat (about 400°F/200°C). Lightly oil the cooking surface to prevent sticking.
  5. Cook the Skewers: Place the assembled skewers on the hot grill. Cook for 6 to 7 minutes per side, turning carefully, until the chicken is cooked through (internal temperature 165°F/74°C) and nicely charred.
  6. Rest & Serve: Remove skewers from the heat and let them rest for 5 minutes before serving. Drizzle with fresh lemon juice if desired.
