Ingredients:
- 4 Tablespoons Dried Greek Oregano
- 2 Teaspoons Dried Thyme
- 1 Teaspoon Dried Rosemary
- 2 Teaspoons Garlic Powder
- 1 Teaspoon Onion Powder
- 1 Teaspoon Dried Mint (Spearmint preferred)
- 1 Teaspoon Ground Black Pepper
- 1 Teaspoon Fine Sea Salt
- 1 Tablespoon Freshly Grated Lemon Zest
Instructions:
- Prep the Zest: Using a Microplane, zest one fresh, unwaxed lemon to yield 1 full tablespoon. Set aside.
- Combine Dry Herbs: In a mixing bowl, combine the dried oregano, thyme, garlic powder, onion powder, dried mint, black pepper, and salt.
- Bloom the Aromas: Gently crush the dried rosemary between your fingers as you add it to the bowl to release its essential oils.
- Mix Thoroughly: Use a small whisk or spoon to thoroughly incorporate all the dry ingredients until the color is uniform.
- Incorporate Zest: Gently fold in the fresh lemon zest. Mix just enough to distribute evenly, being careful not to mash it into a paste.
- Airtight Storage: Transfer the finished Greek seasoning blend into a clean, airtight jar, preferably dark glass.
- Resting Period: Seal the jar tightly and let the seasoning marry for at least 24 hours before using for maximum flavour fusion.
- Apply Marinade (Optional): For 1 pound of protein, mix 2 tablespoons of the seasoning with 1/4 cup of olive oil and the juice of half a lemon. Coat protein and marinate for at least 30 minutes before cooking.
