Ingredients:
- 1 cup liquid egg whites
- 1 tsp arrowroot powder
- 1/4 tsp cream of tartar
- 1/8 tsp sea salt
- 0.5 tsp neutral oil spray
Instructions:
- Whisk liquid egg whites, arrowroot, cream of tartar, and salt in a bowl. Note: Whisk until no clumps remain, but avoid creating too much foam.
- Preheat your non stick skillet over medium low heat for 3 minutes. Note: A consistent heat is more important than a high heat here.
- Mist the pan lightly with the neutral oil spray.
- Pour half of the mixture (approx. 1/2 cup) into the center of the pan.
- Tilt the pan quickly in a circular motion until the batter coats the entire bottom.
- Cook for 3 to 4 minutes until the edges start to lift and the top looks matte.
- Flip the wrap carefully using a wide spatula. Note: The second side only needs about 30 to 60 seconds.
- Slide the wrap onto a plate and cover it with a clean towel. Note: The steam keeps it from drying out as it cools.
- Repeat with the remaining batter.
