Ingredients:
- 2 cups (250g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon granulated sugar
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1 3/4 cups (414ml) eggnog, store-bought or homemade
- 1/4 cup (60ml) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions:
- Preheat waffle iron according to manufacturer's instructions.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, sugar, nutmeg, and cinnamon.
- In a separate medium bowl, whisk together eggnog, oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix; a few lumps are okay.
- Pour the batter onto the preheated waffle iron, using the amount specified by the waffle iron's instructions. Cook until golden brown and crisp. (About 3-5 minutes, depending on the waffle iron).
- Remove waffles from the waffle iron and serve immediately with desired toppings.
