Ingredients:

  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 3/4 cups (414ml) eggnog, store-bought or homemade
  • 1/4 cup (60ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat waffle iron according to manufacturer's instructions.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, sugar, nutmeg, and cinnamon.
  3. In a separate medium bowl, whisk together eggnog, oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix; a few lumps are okay.
  5. Pour the batter onto the preheated waffle iron, using the amount specified by the waffle iron's instructions. Cook until golden brown and crisp. (About 3-5 minutes, depending on the waffle iron).
  6. Remove waffles from the waffle iron and serve immediately with desired toppings.
