Ingredients:

  • 1.5 lbs (680g) new potatoes, scrubbed and halved (if large)
  • Water, to cover potatoes
  • 1/2 teaspoon salt, plus more to taste
  • 4 tablespoons (57g) unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon lemon zest, finely grated
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh dill, chopped
  • 1/4 teaspoon black pepper, freshly ground
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Place potatoes in a large pot and cover with cold, salted water. Bring to a boil over high heat, then reduce heat and simmer until tender – easily pierced with a fork.
  2. Drain the potatoes in a colander or strainer. Return potatoes to the same pot.
  3. While the potatoes are boiling, melt the butter in a small saucepan or microwave-safe bowl. Add the minced garlic and cook until fragrant (but not browned). Stir in the lemon juice, lemon zest, parsley, chives, dill, black pepper, and red pepper flakes (if using).
  4. Pour the lemon-garlic butter over the drained potatoes. Gently toss to coat. Season with additional salt and pepper to taste. Serve immediately.
