Ingredients:
- 2 medium Delicata squashes (approx. 1 lb each)
- 3 tbsp extra virgin olive oil
- 1 tsp dried Italian seasoning
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp freshly grated Parmesan cheese
Instructions:
- Get your oven hot at 400°F (200°C). Slice the ends off the Delicata squashes, cut them in half lengthwise, and scoop out the seeds with a spoon.
- Slice each squash half into 1/2 inch (1.3cm) thick half moons. Note: Keep them uniform so they cook at the same rate.
- In a large bowl, toss the squash slices with olive oil, dried Italian seasoning, salt, and pepper. Ensure every inch is coated.
- Spread the slices in a single layer on a parchment lined baking sheet. Critical: Leave space between pieces so they don't touch.
- Bake for 15 minutes.
- Flip each piece with tongs to brown the other side.
- Bake another 10-15 minutes until edges are deep brown and centers are velvety.
- Remove from the oven and immediately sprinkle with fresh parsley and grated Parmesan cheese.
