Ingredients:

  • 2 cups Bisquick mix
  • 2/3 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon dried herbs (optional, e.g., parsley or thyme)
  • 1/2 teaspoon salt
  • 4 cups chicken or vegetable broth (optional)
  • 1 cup cooked chicken, shredded (optional)
  • 2 cups mixed vegetables (carrots, peas, etc.)

Instructions:

  1. In a large pot, bring the chicken or vegetable broth to a gentle simmer. Add shredded chicken and mixed vegetables if using.
  2. In a mixing bowl, combine Bisquick mix and salt. Add milk and melted butter. Stir until just combined; do not over-mix.
  3. Using a spoon, drop tablespoon-sized portions of the batter onto the simmering broth.
  4. Cover the pot with a lid and let simmer for 10-12 minutes. Do not lift the lid during cooking.
  5. Dumplings are done when they have puffed up and a toothpick inserted into the center comes out clean.
  6. Gently remove dumplings and broth to bowls. Enjoy warm.
