Ingredients:

  • 1 lb (450 g) ground beef (or turkey for a leaner option)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups (480 ml) beef or vegetable broth
  • 1 can (15 oz/425 g) diced tomatoes, undrained
  • 1 can (15 oz/425 g) black beans, rinsed and drained
  • 1 can (15 oz/425 g) corn, drained
  • 1 packet taco seasoning (approximately 1 oz/28 g), or homemade blend
  • 1 cup (240 ml) water
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, diced avocado, and tortilla chips

Instructions:

  1. In a large pot, over medium heat, add the ground beef and cook until browned, about 5-7 minutes; drain excess fat.
  2. Add chopped onion; sauté until translucent, about 3-4 minutes. Stir in minced garlic; cook for 1 minute until fragrant.
  3. Add diced tomatoes, broth, black beans, corn, and taco seasoning to the pot. Pour in water and stir well to combine.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes, stirring occasionally.
  5. Taste and adjust seasoning with salt and pepper. Serve hot, garnished with optional toppings.
