Ingredients:

  • 1 lb Italian sausage, sliced
  • 1 cup long-grain rice, uncooked
  • 2 cups chicken broth
  • 1 can diced tomatoes, drained
  • 1 cup mixed bell peppers, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp black pepper
  • 1 cup shredded cheese

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, sauté the sliced sausage over medium heat until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Add diced onion, bell peppers, and garlic to the skillet. Cook until soft and fragrant, about 3-5 minutes.
  4. In a large bowl, mix the cooked sausage and vegetables with rice, broth, diced tomatoes, oregano, basil, and black pepper.
  5. Pour the mixture into the prepared casserole dish; spread evenly.
  6. Cover with foil and bake for 30 minutes. Remove the foil, sprinkle cheese on top, and bake for an additional 15 minutes until bubbly.
  7. Let sit for 5 minutes before serving; garnish as desired.
