Ingredients:
- 1 lb Italian sausage, sliced
- 1 cup long-grain rice, uncooked
- 2 cups chicken broth
- 1 can diced tomatoes, drained
- 1 cup mixed bell peppers, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp black pepper
- 1 cup shredded cheese
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, sauté the sliced sausage over medium heat until browned, about 5-7 minutes. Drain excess fat if necessary.
- Add diced onion, bell peppers, and garlic to the skillet. Cook until soft and fragrant, about 3-5 minutes.
- In a large bowl, mix the cooked sausage and vegetables with rice, broth, diced tomatoes, oregano, basil, and black pepper.
- Pour the mixture into the prepared casserole dish; spread evenly.
- Cover with foil and bake for 30 minutes. Remove the foil, sprinkle cheese on top, and bake for an additional 15 minutes until bubbly.
- Let sit for 5 minutes before serving; garnish as desired.
