Ingredients:

  • 1 pound (450g) ground beef (or ground turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 can (15 oz / 425g) pinto beans, drained and rinsed
  • 1 can (15 oz / 425g) sweet corn, drained
  • 1 can (28 oz / 796g) diced tomatoes, undrained
  • 1 packet (1 oz / 28g) taco seasoning (or homemade mix)
  • 1 cup (240ml) beef broth (or vegetable broth for a lighter option)
  • Salt and pepper, to taste
  • 2 cups (200g) shredded cheese (cheddar or Mexican blend)
  • 1 cup (240ml) crushed tortilla chips (optional, for crunch)

Instructions:

  1. Heat a skillet over medium heat. Add ground beef, diced onion, and garlic. Cook until meat is browned and onions are translucent. Drain excess fat.
  2. Transfer the cooked beef mixture to the crockpot. Add black beans, pinto beans, corn, diced tomatoes, taco seasoning, and beef broth. Stir to combine well.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours, until flavors meld.
  4. About 15 minutes before serving, sprinkle cheese on top, cover, and let it melt.
  5. Spoon casserole into bowls and garnish with tortilla chips, green onions, and cilantro if desired.
