Ingredients:
- 1 pound (450g) ground beef (or ground turkey)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz / 425g) black beans, drained and rinsed
- 1 can (15 oz / 425g) pinto beans, drained and rinsed
- 1 can (15 oz / 425g) sweet corn, drained
- 1 can (28 oz / 796g) diced tomatoes, undrained
- 1 packet (1 oz / 28g) taco seasoning (or homemade mix)
- 1 cup (240ml) beef broth (or vegetable broth for a lighter option)
- Salt and pepper, to taste
- 2 cups (200g) shredded cheese (cheddar or Mexican blend)
- 1 cup (240ml) crushed tortilla chips (optional, for crunch)
Instructions:
- Heat a skillet over medium heat. Add ground beef, diced onion, and garlic. Cook until meat is browned and onions are translucent. Drain excess fat.
- Transfer the cooked beef mixture to the crockpot. Add black beans, pinto beans, corn, diced tomatoes, taco seasoning, and beef broth. Stir to combine well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until flavors meld.
- About 15 minutes before serving, sprinkle cheese on top, cover, and let it melt.
- Spoon casserole into bowls and garnish with tortilla chips, green onions, and cilantro if desired.
