Ingredients:

  • 1 whole wheat tortilla, 8 inch
  • 3 oz low-sodium deli turkey breast, thinly sliced
  • 1 slice provolone cheese
  • 2 tbsp shredded carrots, finely grated
  • 1 leaf baby spinach
  • 2 thin slices cucumber, seeded and julienned
  • 1 tbsp Greek yogurt
  • 1/2 tsp lemon juice
  • 1 pinch garlic powder

Instructions:

  1. In a small bowl, whisk together the Greek yogurt, lemon juice, and garlic powder until velvety.
  2. Ensure carrots and cucumbers are julienned into thin matchsticks.
  3. Lay the tortilla flat and spread the creamy mixture in a thin, even layer across the center, leaving a 1-inch border.
  4. Place the cheese slice directly over the spread, then layer the turkey slices, spinach, carrots, and cucumbers on top.
  5. Fold in the sides of the tortilla and roll tightly from the bottom up, applying firm pressure to create a dense cylinder.
  6. Wrap the roll tightly in parchment paper or aluminum foil for 2 minutes to set the shape.
  7. Use a serrated knife to slice the wrap into 1-inch rounds.
