- 3 oz low-sodium deli turkey breast, thinly sliced
- 1 slice provolone cheese
- 2 tbsp shredded carrots, finely grated
- 1 leaf baby spinach
- 2 thin slices cucumber, seeded and julienned
- 1 tbsp Greek yogurt
- 1/2 tsp lemon juice
- 1 pinch garlic powder
Instructions:
- In a small bowl, whisk together the Greek yogurt, lemon juice, and garlic powder until velvety.
- Ensure carrots and cucumbers are julienned into thin matchsticks.
- Lay the tortilla flat and spread the creamy mixture in a thin, even layer across the center, leaving a 1-inch border.
- Place the cheese slice directly over the spread, then layer the turkey slices, spinach, carrots, and cucumbers on top.
- Fold in the sides of the tortilla and roll tightly from the bottom up, applying firm pressure to create a dense cylinder.
- Wrap the roll tightly in parchment paper or aluminum foil for 2 minutes to set the shape.
- Use a serrated knife to slice the wrap into 1-inch rounds.
