Ingredients:
- 2 medium firm, slightly tart apples (e.g., Gala, Honeycrisp, or Bramley), peeled, cored, and finely diced
- 2 Tbsp packed brown sugar
- 1 tsp ground cinnamon (for apples)
- 1 Tbsp unsalted butter (for apples)
- 1 ½ cups All-Purpose Flour
- ¼ cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp fine sea salt
- 1 large egg, room temperature
- ½ cup milk (whole or semi-skimmed)
- 1 tsp vanilla extract
- ¼ cup melted unsalted butter (for batter)
- 1 cup powdered/icing sugar, sifted (for glaze)
- 2 Tbsp maple syrup (Grade A or B)
- 1–2 Tbsp milk/cream (for glaze)
- ¼ tsp ground cinnamon (for glaze)
Instructions:
- Melt 1 Tbsp of butter in a small pan over medium heat. Add the diced apples, brown sugar, and cinnamon. Cook for 3–5 minutes until the apples are just beginning to soften but still hold their shape. Remove from heat and set aside to cool completely.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In a separate medium bowl, whisk (or lightly beat) the egg, milk, vanilla extract, and cooled melted butter until just combined.
- Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold gently until just combined. Stop mixing when there are still a few streaks of flour visible. Do not overmix.
- Gently fold the cooled apple mixture into the batter.
- Preheat oven to 190°C (375°F). Line a large baking sheet with parchment paper.
- Using two large spoons or an ice cream scoop, drop large, rustic mounds of the batter onto the prepared baking sheet, leaving about 2 inches (5 cm) between them.
- Bake for 18–20 minutes, rotating the tray halfway through, until the fritters are golden brown and cooked through. Transfer the fritters immediately to a wire rack.
- While the fritters cool slightly, prepare the glaze: In a small bowl, whisk together the sifted icing sugar, maple syrup, ground cinnamon, and 1 Tablespoon of milk/cream.
- Add more milk/cream, a few drops at a time, until the glaze is smooth, thick, and drizzly.
- While the Baked Apple Fritters are still slightly warm, generously drizzle the glaze over the tops. Allow the glaze to set for 5 minutes before serving.
