Ingredients:
- 1lb lean ground beef
- 1tsp kosher salt
- 0.5tsp cracked black pepper
- 5cloves fresh garlic, minced
- 1tbsp fresh rosemary, finely chopped
- 1tbsp fresh thyme leaves
- 0.5tsp crushed red pepper flakes
- 1tbsp avocado oil
- 1tbsp unsalted butter
- 1tsp Worcestershire sauce
Instructions:
- Place a 12-inch cast-iron skillet over medium-high heat. Add the avocado oil and wait until it is shimmering and just starting to show wisps of smoke.
- Add the ground beef to the pan in one large flat disc. Press down with a stiff metal spatula to ensure contact. Season the top heavily with salt and pepper.
- Let the meat sit undisturbed for 3 to 4 minutes until a deep, mahogany-colored crust forms on the bottom. Flip in large sections and break into bite-sized chunks.
- Once the beef is fully browned and no longer pink, push the meat to the edges of the pan to create a well in the center.
- Drop the butter into the center well. Once melted, add the minced garlic, rosemary, thyme, and red pepper flakes. Bloom the aromatics in the fat for 60 seconds.
- Drizzle the Worcestershire sauce over the garlic mixture, then toss all the beef together to coat every grain in the herb butter sauce. Remove from heat immediately.
