Ingredients:

  • 1lb lean ground beef
  • 1tsp kosher salt
  • 0.5tsp cracked black pepper
  • 5cloves fresh garlic, minced
  • 1tbsp fresh rosemary, finely chopped
  • 1tbsp fresh thyme leaves
  • 0.5tsp crushed red pepper flakes
  • 1tbsp avocado oil
  • 1tbsp unsalted butter
  • 1tsp Worcestershire sauce

Instructions:

  1. Place a 12-inch cast-iron skillet over medium-high heat. Add the avocado oil and wait until it is shimmering and just starting to show wisps of smoke.
  2. Add the ground beef to the pan in one large flat disc. Press down with a stiff metal spatula to ensure contact. Season the top heavily with salt and pepper.
  3. Let the meat sit undisturbed for 3 to 4 minutes until a deep, mahogany-colored crust forms on the bottom. Flip in large sections and break into bite-sized chunks.
  4. Once the beef is fully browned and no longer pink, push the meat to the edges of the pan to create a well in the center.
  5. Drop the butter into the center well. Once melted, add the minced garlic, rosemary, thyme, and red pepper flakes. Bloom the aromatics in the fat for 60 seconds.
  6. Drizzle the Worcestershire sauce over the garlic mixture, then toss all the beef together to coat every grain in the herb butter sauce. Remove from heat immediately.
