Ingredients:
- 90g cocoa powder
- 120g oat flour
- 3g baking powder
- 1.5g sea salt
- 170g full-fat Greek yogurt
- 120ml pure maple syrup
- 5ml vanilla extract
- 1 large egg
- 90g semi-sweet chocolate chips
- 30g crushed walnuts
Instructions:
- Preheat your oven to 350°F (175°C). Line your pan with parchment paper for a clean release.
- In a large mixing bowl, whisk together the cocoa powder, oat flour, baking powder, and sea salt until no lumps remain.
- Stir in the Greek yogurt, maple syrup, vanilla extract, and egg until the batter is glossy and smooth.
- Gently fold in the chocolate chips and walnuts using a spatula, ensuring not to overmix.
- Spread the mixture into the pan, smoothing the top with the back of a spoon until it is level.
- Bake for 22–25 minutes. Look for the edges to be slightly firm and the center to have a slight jiggle.
- Remove from the oven and let cool completely in the pan for 30 minutes to allow the protein structure to set.
