Ingredients:

  • 90g cocoa powder
  • 120g oat flour
  • 3g baking powder
  • 1.5g sea salt
  • 170g full-fat Greek yogurt
  • 120ml pure maple syrup
  • 5ml vanilla extract
  • 1 large egg
  • 90g semi-sweet chocolate chips
  • 30g crushed walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C). Line your pan with parchment paper for a clean release.
  2. In a large mixing bowl, whisk together the cocoa powder, oat flour, baking powder, and sea salt until no lumps remain.
  3. Stir in the Greek yogurt, maple syrup, vanilla extract, and egg until the batter is glossy and smooth.
  4. Gently fold in the chocolate chips and walnuts using a spatula, ensuring not to overmix.
  5. Spread the mixture into the pan, smoothing the top with the back of a spoon until it is level.
  6. Bake for 22–25 minutes. Look for the edges to be slightly firm and the center to have a slight jiggle.
  7. Remove from the oven and let cool completely in the pan for 30 minutes to allow the protein structure to set.
