Ingredients:

  • 1 ½ cups (190g) all-purpose flour
  • 3 ½ teaspoons (15g) baking powder
  • 1 tablespoon (12g) granulated sugar
  • ¼ teaspoon (1.5g) salt
  • 1 ¼ cups (300ml) milk, whole or 2%
  • 1 large egg
  • 3 tablespoons (45ml) unsalted butter, melted, plus more for greasing the pan
  • ½ teaspoon vanilla extract (optional)

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In a separate bowl, whisk together the milk, egg, and melted butter (and vanilla extract, if using).
  3. Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Don't overmix! A few lumps are fine.
  4. Heat a lightly oiled griddle or non-stick frying pan over medium heat. Test with a drop of water – it should sizzle gently.
  5. Pour ¼ cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
  7. Serve immediately with your favourite toppings.
