Ingredients:
- 1 ½ cups (190g) all-purpose flour
- 3 ½ teaspoons (15g) baking powder
- 1 tablespoon (12g) granulated sugar
- ¼ teaspoon (1.5g) salt
- 1 ¼ cups (300ml) milk, whole or 2%
- 1 large egg
- 3 tablespoons (45ml) unsalted butter, melted, plus more for greasing the pan
- ½ teaspoon vanilla extract (optional)
Instructions:
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In a separate bowl, whisk together the milk, egg, and melted butter (and vanilla extract, if using).
- Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Don't overmix! A few lumps are fine.
- Heat a lightly oiled griddle or non-stick frying pan over medium heat. Test with a drop of water – it should sizzle gently.
- Pour ¼ cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
- Serve immediately with your favourite toppings.
