Ingredients:

  • 1 ½ cups (192g) all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 ¼ cups (295ml) milk
  • 1 large egg
  • 3 tablespoons (43g) unsalted butter, melted

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix; a few lumps are okay!
  4. Heat a lightly oiled griddle or frying pan over medium heat. A good test is to flick a few drops of water onto the surface; they should sizzle and evaporate quickly.
  5. Pour ¼ cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Small bubbles will start to form on the surface, indicating it's time to flip.
