Ingredients:
- 1 ½ cups (192g) all-purpose flour
- 3 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 ¼ cups (295ml) milk
- 1 large egg
- 3 tablespoons (43g) unsalted butter, melted
Instructions:
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix; a few lumps are okay!
- Heat a lightly oiled griddle or frying pan over medium heat. A good test is to flick a few drops of water onto the surface; they should sizzle and evaporate quickly.
- Pour ¼ cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Small bubbles will start to form on the surface, indicating it's time to flip.
