Ingredients:

  • 2 lbs (900g) Yukon Gold potatoes or Maris Piper potatoes, peeled and cut into even-sized chunks (about 2 inches/5cm)
  • 1/2 cup (120ml) goose fat, duck fat, or vegetable oil
  • 1 teaspoon (5g) kosher salt
  • 1/2 teaspoon (2.5g) freshly ground black pepper
  • Optional: 2 sprigs fresh rosemary, finely chopped OR 2 cloves garlic, minced

Instructions:

  1. Place potatoes in a large pot, cover with cold water, and bring to a boil. Cook for 8-10 minutes, or until just slightly tender.
  2. Drain the potatoes in a colander. Return them to the pot, cover with the lid, and shake vigorously for 30 seconds to rough up the edges.
  3. Preheat oven to 400°F (200°C). Place the fat in the baking sheet and put it in the oven to heat up while the oven preheats.
  4. Carefully remove the hot baking sheet from the oven. Add the potatoes to the hot fat, being careful not to overcrowd. Season with salt, pepper, and optional rosemary or garlic. Toss gently to coat.
  5. Roast for 45-60 minutes, flipping the potatoes halfway through, until golden brown and crispy on all sides. This is the perfect roasted potatoes recipe.
