Ingredients:
- 2 1/2 cups (300g) all-purpose flour, plus more for coating chocolate chips (optional)
- 1 cup (200g) granulated sugar
- 1 teaspoon (5g) baking powder
- 1/2 teaspoon (2.5g) baking soda
- 1/4 teaspoon (1.5g) salt
- 1 cup (240ml) buttermilk
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1 1/2 cups (255g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Gently fold together with a rubber spatula until just combined. Do not overmix!
- Gently fold in the chocolate chips.
- Fill each muffin cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
