Ingredients:

  • 3 tbsp olive oil
  • 3 tbsp fresh lime juice
  • 1 tbsp lime zest
  • 4 cloves minced garlic
  • 1 tbsp honey
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1.5 lb boneless skinless chicken breasts
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Whisk together the olive oil, lime juice, lime zest, minced garlic, honey, smoked paprika, salt, and black pepper in a bowl.
  2. Place the chicken in a Ziploc bag or glass bowl and pour the marinade over it, massaging to ensure every inch is coated. Refrigerate and marinate for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Arrange the chicken in a single layer on the baking sheet, pouring any remaining marinade from the bag over the top.
  5. Bake until the edges are golden brown and the internal temperature reaches 165°F (74°C) for breasts or 175°F (80°C) for thighs.
  6. Remove from oven, transfer to a plate, and tent loosely with foil to rest for 5-10 minutes before serving.
  7. Garnish with chopped fresh parsley or cilantro.
