Ingredients:
- 3 tbsp olive oil
- 3 tbsp fresh lime juice
- 1 tbsp lime zest
- 4 cloves minced garlic
- 1 tbsp honey
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1.5 lb boneless skinless chicken breasts
- 2 tbsp fresh parsley, chopped
Instructions:
- Whisk together the olive oil, lime juice, lime zest, minced garlic, honey, smoked paprika, salt, and black pepper in a bowl.
- Place the chicken in a Ziploc bag or glass bowl and pour the marinade over it, massaging to ensure every inch is coated. Refrigerate and marinate for at least 30 minutes.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Arrange the chicken in a single layer on the baking sheet, pouring any remaining marinade from the bag over the top.
- Bake until the edges are golden brown and the internal temperature reaches 165°F (74°C) for breasts or 175°F (80°C) for thighs.
- Remove from oven, transfer to a plate, and tent loosely with foil to rest for 5-10 minutes before serving.
- Garnish with chopped fresh parsley or cilantro.
