Ingredients:
- 1 lb / 450g Sirloin or Ribeye Steak, cut into 1-inch cubes
- 1 tbsp / 15 ml Olive Oil
- 1 tsp / 5g Garlic Powder
- 1/2 tsp / 2.5g Onion Powder
- 1/2 tsp / 2.5g Smoked Paprika
- 1/4 tsp / 1.25g Black Pepper, freshly ground
- 1/4 tsp / 1.25g Salt, or to taste
- 4 tbsp / 57g Unsalted Butter
- 4 cloves Garlic, minced
- 1 tbsp / 15 ml Fresh Parsley, chopped
- 1 tbsp / 15 ml Fresh Thyme, chopped (optional)
- 1 tbsp / 15 ml Worcestershire Sauce
- 1/2 tsp / 2.5ml Lemon Juice (fresh)
- Pinch Red Pepper Flakes (optional, for a touch of heat)
Instructions:
- Pat the steak cubes dry with paper towels. This is crucial for a good sear.
- In a bowl, combine steak cubes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss to coat evenly.
- Heat the cast iron skillet over high heat until smoking hot. Add the steak cubes in a single layer (work in batches if necessary to avoid overcrowding the pan).
- Sear the garlic steak bites for 1-2 minutes per side, until browned on all sides and cooked to your preferred level of doneness (e.g., medium-rare, medium). Use a meat thermometer for accuracy if needed. Internal temperature: Medium-rare 130-135°F / 54-57°C
- Remove the steak bites from the skillet and set aside. Reduce heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for 30 seconds, or until fragrant (but not browned).
- Stir in the parsley, thyme (if using), Worcestershire sauce, lemon juice, and red pepper flakes (if using).
- Return the steak bites to the skillet and toss to coat evenly with the garlic butter sauce. Serve immediately.
