Ingredients:

  • 1 tbsp olive oil (15 ml)
  • 1 tbsp unsalted butter (14g)
  • 1 pound mixed mushrooms (cremini, shiitake, oyster – roughly 450g), sliced
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine (60 ml) (optional)
  • 1/4 cup chopped fresh parsley (15g)
  • 2 tbsp lemon juice (30 ml)
  • Salt and freshly ground black pepper to taste
  • Optional: A pinch of red pepper flakes

Instructions:

  1. Clean and slice the mushrooms. (Don't wash them unless absolutely necessary; just brush off any dirt.)
  2. Melt the olive oil and butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds (don't let it brown!).
  3. Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they release their moisture and begin to brown, about 8-10 minutes.
  4. If using, pour in the white wine and scrape up any browned bits from the bottom of the pan. Let the wine reduce slightly.
  5. Stir in the parsley, lemon juice, salt, pepper, and red pepper flakes (if using). Cook for another minute to combine the flavors.
  6. Serve Immediately and enjoy the garlic mushrooms!
