Ingredients:
- 1 tbsp olive oil (15 ml)
- 1 tbsp unsalted butter (14g)
- 1 pound mixed mushrooms (cremini, shiitake, oyster – roughly 450g), sliced
- 4 cloves garlic, minced
- 1/4 cup dry white wine (60 ml) (optional)
- 1/4 cup chopped fresh parsley (15g)
- 2 tbsp lemon juice (30 ml)
- Salt and freshly ground black pepper to taste
- Optional: A pinch of red pepper flakes
Instructions:
- Clean and slice the mushrooms. (Don't wash them unless absolutely necessary; just brush off any dirt.)
- Melt the olive oil and butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds (don't let it brown!).
- Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they release their moisture and begin to brown, about 8-10 minutes.
- If using, pour in the white wine and scrape up any browned bits from the bottom of the pan. Let the wine reduce slightly.
- Stir in the parsley, lemon juice, salt, pepper, and red pepper flakes (if using). Cook for another minute to combine the flavors.
- Serve Immediately and enjoy the garlic mushrooms!
