Ingredients:

  • 1 can (15 oz) black beans, rinsed and drained
  • 1/2 cup maple syrup
  • 1/3 cup unsweetened cocoa powder
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 1/3 cup semi-sweet chocolate chips

Instructions:

  1. Place the drained black beans in a colander and rinse under cold water for 30 seconds to remove any canned taste.
  2. Add the rinsed beans, maple syrup, cocoa powder, coconut oil, vanilla, baking powder, and salt to a food processor or high-speed blender. Process on high until the mixture is completely smooth and velvety.
  3. Use a spatula to gently fold in the semi-sweet chocolate chips by hand.
  4. Grease a mini muffin tin or line it with parchment paper.
  5. Spoon the batter evenly into the tins, filling each mold approximately 3/4 of the way.
  6. Bake in a preheated oven at 350°F (175°C) for 18–22 minutes, until the edges are set but the center remains slightly soft.
  7. Allow the bites to cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.
