Ingredients:
- 1 can (15 oz) black beans, rinsed and drained
- 1/2 cup maple syrup
- 1/3 cup unsweetened cocoa powder
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp sea salt
- 1/3 cup semi-sweet chocolate chips
Instructions:
- Place the drained black beans in a colander and rinse under cold water for 30 seconds to remove any canned taste.
- Add the rinsed beans, maple syrup, cocoa powder, coconut oil, vanilla, baking powder, and salt to a food processor or high-speed blender. Process on high until the mixture is completely smooth and velvety.
- Use a spatula to gently fold in the semi-sweet chocolate chips by hand.
- Grease a mini muffin tin or line it with parchment paper.
- Spoon the batter evenly into the tins, filling each mold approximately 3/4 of the way.
- Bake in a preheated oven at 350°F (175°C) for 18–22 minutes, until the edges are set but the center remains slightly soft.
- Allow the bites to cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.
