Ingredients:

  • 1 (5.3 ounce/150g) container plain yogurt (full-fat recommended)
  • 2 large eggs
  • ½ cup (120ml) vegetable oil
  • ¾ cup (150g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour the cake pan.
  2. In a large bowl, whisk together yogurt, eggs, oil, sugar, and vanilla extract until well combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
  5. Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
