Ingredients:
- 1 (5.3 ounce/150g) container plain yogurt (full-fat recommended)
- 2 large eggs
- ½ cup (120ml) vegetable oil
- ¾ cup (150g) granulated sugar
- 1 teaspoon vanilla extract
- 2 cups (240g) all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the cake pan.
- In a large bowl, whisk together yogurt, eggs, oil, sugar, and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
- Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
