- 1 lb (450 g) ground beef (80% lean)
- 1 lb (450 g) ground pork
- 1 cup (150 g) breadcrumbs
- 1/2 cup (120 ml) milk or dairy alternative
- 2 large eggs
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons (30 g) unsalted butter
- 2 large yellow onions, thinly sliced
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 cup (100 g) shredded Gruyère cheese or Swiss cheese
- Fresh parsley, chopped (for garnish)
Instructions:
- Caramelize the Onions: Heat butter in a skillet over medium heat. Add sliced onions, sugar, and salt. Cook, stirring occasionally, for about 30 minutes until golden brown and caramelized.
- Prepare the Meatloaf Mixture: In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, eggs, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, salt, and black pepper. Fold in the caramelized onions, reserving a small portion for topping.
- Shape and Bake the Meatloaf: Preheat the oven to 350°F (175°C). Transfer the meat mixture into a loaf pan, shaping it into a loaf. Top with reserved caramelized onions and shredded cheese.
- Bake the Meatloaf: Place the loaf pan on a baking sheet to catch drips. Bake for 1 hour, or until the internal temperature reaches 160°F (70°C).
- Rest and Serve: Allow the meatloaf to rest for 10 minutes before slicing. Garnish with fresh chopped parsley and serve.
