Ingredients:
- 2 cups (475ml) chicken or vegetable broth (low-sodium preferred)
- 1 tablespoon (15ml) unsalted butter or olive oil
- 1 teaspoon (5ml) dried Italian seasoning or your favourite herb blend
- 1/2 teaspoon (2.5ml) salt (or to taste)
- 1/4 teaspoon (1.25ml) black pepper (freshly ground preferred)
- 2 cups (360g) Minute Rice (long grain or white rice works best)
- 2 tablespoons (30ml) chopped fresh parsley or chives (for garnish)
Instructions:
- In a medium saucepan, bring the chicken or vegetable broth, butter (or olive oil), Italian seasoning, salt, and pepper to a boil over medium-high heat.
- Stir in the Minute Rice.
- Cover the saucepan tightly, reduce the heat to low, and simmer for 5 minutes, or until all the liquid has been absorbed. Visual Cue: the rice should be fluffy and tender, with no visible liquid remaining.
- Remove the saucepan from the heat and let it stand, covered, for 2 minutes. Fluff with a fork.
- Stir in or sprinkle the chopped fresh parsley or chives over the rice before serving.
