Ingredients:

  • 1 1/2 cups (190g) all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar (12g)
  • 1 1/4 cups (300ml) milk
  • 1 large egg
  • 3 tablespoons (45ml) unsalted butter, melted and cooled slightly
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Gently pour the wet ingredients into the dry ingredients. Fold until just combined. A few lumps are okay; do not overmix!
  4. Preheat a lightly oiled griddle or frying pan over medium heat. A drop of water should sizzle and dance when the griddle is hot enough.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
  7. Serve hot with your favorite toppings!
