Ingredients:

  • 1 cup (250g) creamy peanut butter
  • 1/2 cup (100g) brown sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) sea salt
  • 1 1/2 cups (135g) old-fashioned rolled oats
  • 1/2 cup (85g) semi-sweet chocolate chips
  • 1/4 cup (30g) chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, stir together the peanut butter and brown sugar until the mixture forms a smooth, thick paste.
  3. Whisk in the egg and vanilla extract until the batter is glossy and fully combined.
  4. Stir in the baking soda and salt.
  5. Gently fold in the rolled oats and your choice of mix-ins (chocolate chips and walnuts) until just combined; do not over-mix.
  6. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
  7. Press down slightly on each cookie with your palm.
  8. Bake for 8–10 minutes until the edges are deep golden brown and the centers still look slightly underbaked.
  9. Remove from the oven and let the cookies cool on the sheet to firm up.
