Ingredients:
- 1 cup (250g) creamy peanut butter
- 1/2 cup (100g) brown sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) sea salt
- 1 1/2 cups (135g) old-fashioned rolled oats
- 1/2 cup (85g) semi-sweet chocolate chips
- 1/4 cup (30g) chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, stir together the peanut butter and brown sugar until the mixture forms a smooth, thick paste.
- Whisk in the egg and vanilla extract until the batter is glossy and fully combined.
- Stir in the baking soda and salt.
- Gently fold in the rolled oats and your choice of mix-ins (chocolate chips and walnuts) until just combined; do not over-mix.
- Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
- Press down slightly on each cookie with your palm.
- Bake for 8–10 minutes until the edges are deep golden brown and the centers still look slightly underbaked.
- Remove from the oven and let the cookies cool on the sheet to firm up.
