Ingredients:
- 4 large flour tortillas (10-12 inch diameter)
- 2 tablespoons olive oil (30 ml)
- Pinch of salt
- 1 pound (450g) ground beef (80/20 blend)
- 1 medium onion, finely chopped (approx. 1 cup)
- 2 cloves garlic, minced (approx. 2 teaspoons)
- 1 packet (1 ounce/30g) taco seasoning
- ½ cup water (120 ml)
- 1 (16 ounce/450g) can refried beans
- Optional: 1 tablespoon of hot sauce (15 ml)
- 2 cups (225g) shredded cheddar cheese
- 1 cup (225g) shredded mozzarella cheese
- ½ cup sour cream (113 g)
- ½ cup diced tomatoes
- ¼ cup sliced green onions
- ¼ cup sliced black olives (optional)
- Optional: Jalapeño slices
- Optional: Fresh cilantro, chopped
- Optional: Guacamole or avocado slices
Instructions:
- Preheat oven to 400°F (200°C). Brush tortillas with olive oil and sprinkle with salt. Bake until lightly golden and crispy, about 5-7 minutes per side. Watch carefully to prevent burning.
- Brown the ground beef in a skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
- Add chopped onion and garlic to the skillet and cook until softened. Stir in taco seasoning and water. Simmer until the sauce has thickened.
- Heat refried beans in a microwave or saucepan until warm. Stir in hot sauce, if using.
- Spread a thin layer of refried beans evenly over each baked tortilla. Top with seasoned ground beef, cheddar cheese, and mozzarella cheese.
- Return pizzas to the oven and bake until the cheese is melted and bubbly, about 5-7 minutes.
- Remove pizzas from the oven. Top with sour cream, diced tomatoes, green onions, black olives, jalapeños (if using), and fresh cilantro (if using).
- Slice each pizza into wedges and serve immediately with guacamole or avocado slices (if using).
