Ingredients:

  • 4 large flour tortillas (10-12 inch diameter)
  • 2 tablespoons olive oil (30 ml)
  • Pinch of salt
  • 1 pound (450g) ground beef (80/20 blend)
  • 1 medium onion, finely chopped (approx. 1 cup)
  • 2 cloves garlic, minced (approx. 2 teaspoons)
  • 1 packet (1 ounce/30g) taco seasoning
  • ½ cup water (120 ml)
  • 1 (16 ounce/450g) can refried beans
  • Optional: 1 tablespoon of hot sauce (15 ml)
  • 2 cups (225g) shredded cheddar cheese
  • 1 cup (225g) shredded mozzarella cheese
  • ½ cup sour cream (113 g)
  • ½ cup diced tomatoes
  • ¼ cup sliced green onions
  • ¼ cup sliced black olives (optional)
  • Optional: Jalapeño slices
  • Optional: Fresh cilantro, chopped
  • Optional: Guacamole or avocado slices

Instructions:

  1. Preheat oven to 400°F (200°C). Brush tortillas with olive oil and sprinkle with salt. Bake until lightly golden and crispy, about 5-7 minutes per side. Watch carefully to prevent burning.
  2. Brown the ground beef in a skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  3. Add chopped onion and garlic to the skillet and cook until softened. Stir in taco seasoning and water. Simmer until the sauce has thickened.
  4. Heat refried beans in a microwave or saucepan until warm. Stir in hot sauce, if using.
  5. Spread a thin layer of refried beans evenly over each baked tortilla. Top with seasoned ground beef, cheddar cheese, and mozzarella cheese.
  6. Return pizzas to the oven and bake until the cheese is melted and bubbly, about 5-7 minutes.
  7. Remove pizzas from the oven. Top with sour cream, diced tomatoes, green onions, black olives, jalapeños (if using), and fresh cilantro (if using).
  8. Slice each pizza into wedges and serve immediately with guacamole or avocado slices (if using).
